Exploring Michoacán is like stepping into a living canvas where towering pine trees and spiky agave plants thrive side by side. This landscape reflects generations of indigenous wisdom, harmoniously blending nature and culture. The agave plants, central to mezcal production, are cultivated with deep respect for the land, honoring traditions that have sustained communities for centuries.
Before our first sip, we were guided to take a moment. We swirled the mezcal gently, letting its aroma rise—earthy, floral, smoky. The anticipation built, and then came the first taste. Boom! It hit hard, a rush that startled my senses and left a slight, raw burn as it traveled down. “First sip is always a shock,” our guide said with a knowing smile. He wasn’t kidding—it was as if the mezcal itself demanded respect right from the start.
We learned to roll the liquid around in our mouths, letting it rest on the palate and noticing how the sharp, initial intensity opened up into a spectrum of flavors. The second taste, more familiar now, felt different—softer, layered, revealing hints
of pepper and a whisper of sweetness that followed us down the throat.
The day at the distillery was mesmerizing. We watched the smoky process of cooking the “piñas”, the heart of the agave, which imparted that signature depth. The distilling room buzzed with stories of the old and new methods, blending tradition with a touch of innovation. And the best part? Understanding that each step, from field to bottle, carries the hands and hearts of the mezcal makers.
One remarkable aspect of mezcal production in Michoacán is the agricultural partnership between the pine trees and agave. These two seemingly different plants coexist in a balanced ecosystem, where the tall, protective pines provide shade and a microclimate that benefits the slower-growing agave. This symbiotic relationship is a testament to the sustainable practices of the region’s farmers, who work in harmony with nature to maximize biodiversity and land productivity. The pines contribute to soil health and water retention, while the agave roots stabilize the earth, creating a resilient landscape that supports both conservation and cultivation.
This deep connection to the land is evident in the practices of indigenous mezcal producers. Many are committed to sustainable methods that honor their ancestral relationship with the environment, ensuring that mezcal production supports both the community and the ecosystem.
Our day didn’t end there. We soon found ourselves immersed in the vibrant energy of a nearby town, gearing up for a Day of the Dead procession. The streets were alive with color, music, and families preparing to honor their loved ones. I was deeply moved by the tremendous respect and honoring of the dead during this sacred tradition. My husband and I added our family photos to an altar at Shaun’s home, our gracious host, and throughout the day, I found myself welling up with tears. We all shared stories and memories of those who had passed and discussed what we would have left on their graves to invite them to visit—a part of the Day of the Dead celebration I hadn’t fully understood until then.
Dinner at a newly opened venue provided a taste of local dishes, rich and soulful, perfectly paired with the lingering notes of mezcal on our tongues. And when we arrived at the iconic cemetery—where countless marigolds glowed in the twilight and the air buzzed with quiet reverence—it was impossible not to be awestruck. The beauty, the unity, the feeling that life and death are two sides of the same coin—it all wrapped around us like a warm embrace.
This journey was more than a trip; it was an invitation to feel, taste, and experience the spirit of Michoacán. From the first shocking sip of mezcal to witnessing the profound respect for the land and traditions, I felt connected to the heart of this culture in a way that will stay with me long after the last flower wilts.
