Our recent visit to a mezcal distillery in this picturesque locale was an educational experience like no other, steeped in tradition, rustic charm, and a touch of history. Surrounded by nature and welcomed by good-hearted people, our exploration of the artisanal process of mezcal production was both enlightening and inspiring.

As we approached the distillery, the beauty of the surroundings took our breath away. The lush greenery, rolling hills, and the serenity of the natural landscape created a perfect backdrop for our adventure. The distillery itself was an extension of this rustic charm, blending seamlessly with the environment and exuding an aura of authenticity and tradition. It was clear from the outset that this was a place where mezcal was crafted with love, care, and a deep respect for nature.

At the core of this impressive operation was a colossal 10-ton oven, a testament to the scale and robustness of the production process. This massive oven, used for cooking the agave, was a sight to behold. It was an essential part of the traditional method of mezcal production, and witnessing it in action was a captivating experience. The sheer size and power of the oven underscored the dedication and effort that went into creating each batch of mezcal.

One of the most fascinating aspects of our visit was meeting the 4th generation mezcalero who helmed the distillery. This master craftsman, whose family had been producing mezcal since the days of prohibition, shared with us the rich history and heritage of their craft. It was incredible to learn how, despite the challenges and adversities faced over the years, they had continued to preserve and perfect their artisanal techniques. The mezcalero’s passion and commitment to their craft were palpable, and their stories added a profound depth to our understanding of mezcal production.

Our quest for an artisanal and rustic process led us to witness every intricate step involved in mezcal production. From the meticulous selection and harvesting of agave plants to the traditional method of roasting, fermenting, and distilling, each stage was a celebration of craftsmanship and tradition. The distillery’s robust operation produced over 40,000 liters of mezcal annually, a remarkable feat achieved through a harmonious blend of age-old techniques and modern innovations.

The mezcal produced here was sold to renowned brands like Amaras, and the distillery also had its own unique labels. This collaboration between traditional artisans and contemporary brands showcased the versatility and appeal of mezcal in the modern market.

What truly set this visit apart was the warmth and hospitality of the people at the distillery. The mezcalero and his team were not just producers but passionate educators who took the time to explain every aspect of the process. They shared their knowledge generously, answering our questions and offering insights that enriched our understanding of mezcal.

We were treated to a comprehensive tour of the facility, where we observed the agave roasting in the massive oven, the fermentation process in rustic wooden vats, and the final distillation in traditional copper stills. Each step was a revelation, and it was evident that the people here took immense pride in their work.

At the end of our tour, we had the opportunity to taste the final product—a mezcal that was very good, though not exceptional. While it may not have been the finest mezcal we had ever tasted, it was a reflection of the artisanal process and the dedication of the people who produced it. The flavors were robust and authentic, capturing the essence of the agave and the craftsmanship involved.

The mezcal was earthy and complex, with smoky notes from the roasting process and a subtle sweetness that lingered on the palate. It was a true representation of the artisanal techniques used and the quality of the ingredients. Though it didn’t achieve greatness in our eyes, it was a testament to the skill and passion of the mezcalero.

Our visit to the mezcal distillery near Charo, Michoacán, was a memorable and educational experience that left a lasting impression. The beauty of the surroundings, the authenticity of the artisanal process, and the warmth of the people combined to create an unforgettable journey into the world of mezcal.
